  1. Pound Cake

  2. 1 lb unsalted butter, softened

  3. 1 lb sugar, granulated

  4. 8 md eggs, room temp

  5. pinch salt

  6. 1/2 ts nutmeg, ground

  7. 1/2 ts mace, ground

  8. 4 c flour, sifted

  9. In a large bowl, cream butter until fluffy. Gradually work in the

  10. sugar and blend until mixture is no longer grainy.

  11. Add salt to eggs; beat eggs until light-colored and foamy, about five minutes. Add nutmeg and mace to eggs.

  12. Stir eggs gradually into sugar-butter mixture. Sift flour and beat

  13. in gradually, stirring only long enough to blend all ingredients.

  14. The finished batter will be quite stiff.

  15. Smooth the batter into an ungreased tube pan. Bake in a preheated

  16. 350 oven for 30 minutes, then reduce heat to

  17. 325 and continue to

  18. bake another 30 minutes. When a new broomstraw or toothpick poked

  19. in the center comes out dry and the cake edges pull away from the

  20. pan, remove pan from oven and cool. Turn cake out and serve unfrosted.
