  1. 2 egg whites

  2. 1 Tbsp cornstarch

  3. 1/2 cup white sugar

  4. 1 tsp vanilla

  5. 1 cup flaked coconut

  1. How to make it Preheat the oven to 300 degrees F. Line two baking sheets with parchment paper. Beat egg whites until stiff but not dry. Fold in cornstarch. Transfer egg and cornstarch mixture to a double boiler and set to a low heat. Stir in the sugar and cook for three to four minutes or until mixture pulls away from pan. Remove from heat and stir in vanilla and then the coconut. Drop by spoonfuls 1 1/2 inches apart on lined baking sheets. Bake for 20 to 25 minutes or until golden brown and firm to the touch. Cool and serve.
