  1. 4 cups zucchini -- fresh or frozen, shredded

  2. 1 cup onions -- chopped

  3. 1 clove garlic -- minced

  4. 1 cup egg substitute

  5. 1 Tbsp sherry or lemon juice

  6. 1 tsp basil

  7. 1 tsp thyme

  8. 1 tsp oregano

  9. 1 tsp ginger

  10. 1 cup low-fat cheddar cheese -- (4 oz) shredded

  11. 1 cup Parmesan cheese

  12. 1 cup tofu -- crumbled Italian bread crumbs

  1. Preparation : 1. In a deep 9-inch pie plate or shallow casserole, microwave zucchini, onions, and garlic 7 minutes on HIGH, stirring twice.

  2. Beat egg substitute; add wine and seasonings. Add to vegetables.

  3. Stir in cheeses and tofu. Sprinkle crumbs on top.

  4. Microwave 10 minutes on HIGH or until nearly set in center.
