  2. CARIBBEAN VEGETABLE STEW

  6. 2 c Chopped onions

  7. Vegetable broth or white

  8. Wine for sauteeing

  9. 3 c Chopped cabbage

  10. 1 Fresh chile, minced

  13. 1 tb Grated fresh ginger root

  14. 2 c Water

  15. 3 c Diced sweet potatoes, cut 1/2- to 3/4-inch cubes Salt to taste

  16. 2 c Undrained fresh or canned

  17. Tomatoes

  18. 2 c Fresh or frozen sliced okra

  19. 3 tb Fresh lime juice

  20. 2 tb Chopped fresh cilantro

  21. Chopped peanuts (I omitted

  22. These)

  23. Sprigs of cilantro

  24. In a nonreactive pot, saute the onions in the

  25. broth/wine on medium heat for 4 or 5 minutes. Add the

  26. cabbage and the chile or cayenne and continue to

  27. saute, stirring often, until the onions are

  28. translucent, about 8 minutes. Add the grated ginger

  29. andthe water, cover the pot, and bring to a boil. Stir

  30. in the sweet potatoes, sprinkle with salt, and simmer

  31. for 5 or 6 minutes, until the potatoes are barely

  32. tender. Add the tomatoes, okra, and lime juice.

  33. Simmer until all of the vegetables are tender, about 15 minutes. Stir in the cilantro and add more salt to

  34. taste. Sprinkle the stew with chopped peanuts. Top
