  1. 225g plain flour

  2. 110g unsalted butter

  3. pinch of salt

  4. 3 tablespoons cold water

  5. 200g smoked gammon

  6. 4 fresh tomatoes

  7. 200g creme fraiche (30% fat)

  8. 20ml semi-skimmed milk

  9. 4 medium eggs

  10. 100g mixed grated cheese

  11. salt and black pepper to taste

  1. Put the flour, butter and a pinch of salt into a food processor and mix until it looks like breadcrumbs. Add the water until it joins together. Take the pastry out of the processor and roll into a ball and leave in the fridge for 30 minutes.

  2. Use the pastry to fill a 23cm (9 in) non-metallic flan dish and bake this blind for 15 minutes at 200 C / Gas 6. Remove beans and foil (from blind baking) and then bake an additional 5 minutes to dry the bottom of the case (I use part of a beaten egg to seal the bottom). Once done leave to cool.

  3. Once the pastry is cool preheat the microwave to 190 C. Once heated use the combination feature to add 30% micro power.

  4. In the meantime make the filling by cooking the gammon, then add to the pastry case. Cut the tomatoes and add to the case. Mix the creme fraiche, milk, eggs and cheese together, season to taste and add to the pastry case.
