  1. 1/2 cup margarine

  2. 2 ounces chocolate

  3. 1 cup sugar

  4. 2 each eggs

  5. 1 cup all-purpose flour

  6. 1/2 cup pecans

  7. FROSTING 1 1/2 cups powdered sugar

  8. 3 tablespoons margarine

  9. 2 tablespoons milk

  10. drop food coloring 3/4 teaspoon peppermint extract

  11. GLAZE 4 ounces semisweet chocolate

  12. 2 tablespoons margarine

  13. FOR CAKE:

  14. 350 degrees. Grease an

  15. 8 or 9 inch pan.

  16. Melt margarine and chocolate over a low heat; set aside.

  17. In a small mixer bowl, at low speed mix together sugar and eggs for 2 minutes. Add other ingredients.

  18. Pour into the pan and bake for 25 - 30 minutes, or until center is set.

  19. FOR FROSTING:

  20. Beat all items together and spread over cooled cake; refrigerate for at least one hour.

  21. FOR GLAZE:

  22. Melt all items in a saucepan and drizzle over layer. Cover and refrigerate at least 1 hour.
