  1. 2 1/2 cups 275g / 9.7oz Coriander seeds

  2. 1 1/2 cups 355ml Red chillies

  3. 1/2 cup 31g / 1.1oz Black peppercorns

  4. 3/4 cup 177ml Red gram dal - (pigeon peas, toor dal), picked

  5. Over and rinced

  6. 4 tablespoons 60ml Bengal gram dal - picked over and rinsed

  7. (yellow split peas - channa dal)

  8. 1/2 tablespoon 7 1/2ml Cumin seeds

  9. 1 teaspoon 5ml Ground turmeric

  10. 1 Curry leaves

  1. In a heavy saucepan, dry-roast all the ingredients seperately, until they each give off a strong aroma. (However do not roast the Ground turmeric.) Place all the ingredients in an electric blender or food processor. Blend into a fine powder. Store in an airtight container and use as required. Makes 15 ounces.
