  1. 1 1/2-2 lb Tilapia or Flounder

  2. Garlic , 2 cloves

  3. Cilantro , 1 cup

  4. Green Onion s, 4

  5. Lime s, 4

  6. Salt

  7. Cumin

  8. Crushed Red Chili Pepper

  9. Cayenne Pepper

  10. Chili Powder

  11. Tabasco Sauce

  12. Avocado , 1-2

  13. Flour or Corn Tortillas, 10

  1. Finely chop garlic, ½ cup cilantro, and 2 green onions together. Add large pinch of salt and the juice of 2 limes. Add cumin, crushed red chili pepper, cayenne pepper, chili powder, and tabasco to taste. Mix the ingredients. Crush the mixture into a paste by pressing down on the mix with the back of a spoon (or use a mortar & pestle). Taste Slice the fish fillets crosswise into 1-2" width pieces. Place in a bowl or casserole. Add the marinade and turn to coat well. Cover and place in the refrigerator for 1 to 3 hours.

  2. When ready to cook, turn oven to 200. Place tortillas in the oven. Heat a large pan over medium high heat. Add cooking oil, if necessary. Add all the fish. Cook until browned on one side (three to four minutes). Turn and cook until the fish flakes.

  3. Prepare the garnish while the fish is cooking. Slice avocado lengthwise, green onion crosswise, and cilantro into 2" lengths. Slice lime into eights.

  4. Serve on warm tortillas. Garnish to taste.
