  1. 2 6-oz. cans tuna in water , drained and flaked

  2. 1 jalapeno , seeded and minced (or more, if you like)

  3. 1/2 cup finely chopped red bell pepper

  4. 1/2 cup chopped sweet onion , like Vidalia or Walla Walla

  5. 1/4 cup chopped cilantro

  6. salt and pepper to taste

  7. Squeeze of lime juice (half a lime or so)

  8. 1/2 cup mayonnaise (or to taste)
