  1. 4 boneless, skinless chicken breasts

  2. 2 tablespoons olive oil

  3. 1 teaspoon sesame oil

  4. 1 1/2 teaspoons minced fresh ginger

  5. 1 teaspoon ground cumin

  6. 1/2 teaspoon sweet paprika

  7. 1/2 teaspoon ground coriander

  8. 1/4 teaspoon ground cinnamon

  9. 1 tablespoon lemon juice

  10. 1 tablespoon chopped cilantro Mango-Mint Relish:

  11. 1 jalapeno, seeded, minced

  12. 1 cup finely diced ripe mango

  13. 1/2 cup finely diced red bell pepper

  14. 1/3 cup finely diced red onion

  15. 2 tablespoons lemon juice

  16. 1 tablespoon olive oil

  17. 1 tablespoon finely chopped fresh mint

  18. 1/2 teaspoon minced ginger mint sprigs for garnish, optional lemon slices for garnish, optional

  1. Prepare Chicken: Place chicken in shallow baking dish. In medium nonstick skillet, place olive oil and sesame oil over medium heat. Add ginger, cumin, paprika, coriander and cinnamon; cook until fragrant, about 1 minute.

  2. Remove from heat; stir in lemon juice and cilantro. Cool slightly and pour over chicken, turning to coat. Cover and refrigerate 20 minutes.

  3. Meanwhile, prepare Mango-Mint Relish: In medium bowl, combine jalapeno, mango, red pepper, red onion, lemon juice, olive oil, mint and ginger. Cover and refrigerate until serving time.

  4. In same skillet, over medium heat, sautÈ chicken turning to brown on both sides and until fork can be inserted with ease, about 12 minutes. Serve chicken topped with Mango-Mint Relish and garnish, if desired, with mint sprigs and lemon slices.
