  1. 1 cup 237ml Cream - whipping

  2. 2 tablespoons 30ml Confectioners sugar

  3. 1/2 teaspoon 2 1/2ml Vanilla

  4. 1/2 cup 118ml Marshmallows - miniature

  5. 1 1/2 cups 355ml Rhubarb sauce - thickened

  6. 2 tablespoons 30ml Almonds; whole - toasted

  1. In a medium bowl with electric mixer, beat cream, sugar, and vanilla until stiff peaks form. Fold in marshmallows In a 1 qt compote dish, layer 1/4 of the cream, 1/3 of Rhubarb sauce, and 1/4 of almonds.

  2. Repeat twice. Top with remaining cream and almonds.

  3. Refrigerate until ready to serve.
