  1. 4 ounces uncooked fettuccine

  2. 1/4 cup butter

  3. 1 tablespoon all-purpose flour

  4. 1 cup milk

  5. 1 egg yolk, beaten

  6. 3/4 cup shredded Swiss cheese

  7. 1/2 cup chopped fully cooked ham

  8. 1/2 cup frozen green peas

  9. 1 tablespoon grated Parmesan cheese

  1. Cook fettuccine according to package directions. Meanwhile, in a heavy saucepan, melt butter; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Add Swiss cheese; cook and stir over low heat for 1 minute or until cheese is melted. Add ham and peas; cook 2 minutes longer or until heated through. Drain the fettuccine; top with ham mixture and Parmesan cheese. Yield: 2 servings.
