  1. 2 Fresh Day Boat Scallops

  2. 1/4 cup blended oil(extra virgin and canola)

  3. 1 Portobello Mushroom cleaned

  4. 1 Oyster Mushroom

  5. 1 Shitake Mushroom

  6. 2 Shallots sliced

  7. 2 tsp. chopped parsley

  8. 2 tsp. chopped chervil white truffle oil salt and pepper

  1. In a saute pan melt butter.

  2. Add shallots cook for 3 minutes until soft add mushrooms. Cook down soft and brown. You want to carmelize them.

  3. Add fresh herbs season with salt and pepper. Reserve.

  4. In another saute pan add oil. Season scallops. Let pan get to smoking point add scallops. Sear nicely for about 2-3 minutes on each side.

  5. Place warm mushrooms on a plate. Place scallops around drizzle with truffle oil. Serve.<
