  1. 4 tablespoons caster sugar

  2. 125ml lemon juice

  3. 2 teaspoons diced onion

  4. 1 teaspoon Dijon mustard

  5. 1/2 teaspoon salt

  6. 160ml olive or vegetable oil

  7. 1 tablespoon poppy seeds

  8. 1 romaine (cos) lettuce, torn into bite-size pieces

  9. 100g grated Gruyere or Manchego cheese

  10. 100g cashews

  11. 30g dried cranberries

  12. 1 apple - peeled, cored and diced

  13. 1 pear - peeled, cored and sliced

  2. In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.
