  1. 2 tb Margarine

  2. 2 Medium zucchini, sliced

  3. 1 Medium onion, sliced

  4. 1 pk

  5. Unflavored gelatin 1/4

  6. Cold water

  7. 1 c

  8. Skim milk, heated to boiling 3/4

  9. c

  10. Lite sour cream

  11. 1/3 c

  12. Grated parmesan cheese

  13. Dried dill weed

  14. 1 ts

  15. Salt

  16. 1 ds

  17. Red pepper

  1. In skillet, melt margarine and cook zucchini with onion, stirring occasionally until very tender; set aside.

  2. In blender, sprinkle gelatin over cold water; let stand 2 minutes.

  3. Add hot milk and process at low 2 minutes.

  4. Add sour cream, cheese, dill, salt and pepper, then zucchini mixture.

  5. Process at high until smooth.

  6. Pour into bowl.

  7. Chill until set.

  8. To serve, whisk smooth.
