  1. 4 cups 948ml Summer squash - halved lengthwise,

  2. 4 cups 948ml Zucchini - halved lengthwise,

  3. 2 cups 474ml Red pepper - stemmed, seeded,

  4. Quartered lengthwise, and thinly sliced

  5. 3/4 cup 46g / 1.6oz Thinly-sliced green onions

  6. 1/4 cup 59ml Olive oil

  7. 3 tablespoons 45ml Frozen apple juice concentrate - thawed

  8. 2 tablespoons 30ml Lemon juice

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  11. 1/2 cup 73g / 2.6oz Freshly-chopped mint

  12. 1/4 cup 36g / 1 1/3oz Freshly-chopped parsley

  1. In a large bowl, combine the summer squash, zucchini, red pepper, and green onions, and toss to combine.

  2. In a small bowl, combine the olive oil, apple juice concentrate, lemon juice, salt, and pepper, and whisk well to combine. Pour the dressing over the vegetables, sprinkle with the chopped herbs, and toss gently to thoroughly coat the vegetables with the dressing.

  3. Cover and chill for 1 hour to allow the flavors to blend. Before serving taste and adjust seasonings as needed.

  4. This recipe yields 8 to 10 servings.
