  1. 1 container (16 oz.) part skim ricotta cheese

  2. 1/3 cup sugar

  3. 2 tablespoons finely chopped candied orange peel or candied ginger

  4. 1 tablespoon lemon juice

  5. 1 teaspoon vanilla

  6. 1 teaspoon grated orange peel

  7. 1/4 teaspoon cinnamon

  8. 1 package Keebler Ready Crust Mini Graham Cracker Pie Crust

  9. 3 thin orange slices, halved

  1. In fine-mesh strainer place cheese. Position strainer over bowl. Refrigerate at least 2 hours, allowing liquid from cheese to drain into bowl. Discard liquid from bowl.

  2. In food processor combine cheese, sugar, candied orange peel, lemon juice, vanilla, orange peel (if desired) and cinnamon. Cover and process until nearly smooth. Spoon into crusts. Refrigerate at least 2 hours.

  3. Top each pie with orange piece or grated orange peel as desired. Store in refrigerator. Yields 2 1/4 cups filling Note: Candied orange peel can be used instead of grated.
