  1. 2 cups 125g / 4.4oz Cake flour - sifted

  2. 1 teaspoon 5ml Baking powder

  3. 1 teaspoon 5ml Soda

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 1/2 cup 99g / 3 1/2oz Butter - or shortening

  6. 1 1/2 cups 297g / 10oz Sugar

  7. 1 Egg

  8. 1 yolk - well beaten

  9. 1 cup 237ml Banana - mashed

  10. 3/4 cup 177ml Milk - sour

  11. 1 teaspoon 5ml Vanilla

  1. Sift flour once, measure, add baking powder, soda and salt and sift together three times.

  2. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy.

  3. Add eggs and beat well; then add bananas and beat again.

  4. Add flour to creamed mixture, alternately with milk, a small amount at a time, beating after each addition, until smooth. Add vanilla.

  5. Bake in two greased pans, 8 x 8 x 2", in moderate oven, 375F for 25 minutes.

  6. Spread Lemon Filling (see recipe) between layers and Orange Lemon Frosting (see recipe) on top and sides of cake.
