  1. 2 medium zucchini, cut into 1/4 inch rounds

  2. 2/3 cup bread crumbs

  3. 1/3 cup parmesan cheese

  4. 1 cup flour

  5. 2 whole eggs

  6. 2 tablespoons butter

  1. : In a shallow dish, combine bread crumbs and parmesan cheese. Set aside. Place flour in shallow dish. Set aside. Beat two eggs in shallow dish and set aside. Heat 2 tablespoons butter in skillet over medium heat. Season zucchini rounds with salt and pepper. Dredge in flour, beaten egg, then bread crumb mixture. Saute until golden brown.
