  1. 1 12-inch pizza shell

  2. 8 oz Mozzarella cheese, shredded

  3. 4 oz Monterey jack cheese shredde

  4. 8 oz Ripe tomatoes, thinly sliced

  5. 4 Shrimp (16-20 size), split

  6. 1/4 c chile rub

  7. 2 tb Green scallion tops, thinly

  8. -sliced 1 ts Texas gremolata (garnish)

  9. 2 ts Garlic, finely chopped

  10. 1 tb Chile powder

  11. 1 lime

  12. 1/2 c Olive oil

  13. 1 tb Cilantro, finely chopped

  14. Salt & pepper to taste

  15. 2 tb Lime zest, finely chopped

  16. 2 tb Garlic, finely chopped

  17. 1 c Cilantro, finely chopped

  18. Prepare Chile Rub: Combine all rub ingredients in a small mixing bowl 3/4 cup (enough for 12 large split shrimp).
