  2. ORANGE CAKE WITH HOT RUM SAUCE

  7. 1 c Butter or Margarine, soften

  8. 1 c Sugar

  9. 5 ts Grated Orange Rind

  10. 2 Eggs

  11. 2 1/2 c Flour

  12. 2 ts Baking Powder

  13. 1 t Baking Soda

  14. 1/2 ts Salt

  15. 1 c Buttermilk

  16. 1 c Pecans, finely chopped

  17. Powdered Sugar

  18. --HOT RUM SAUCE--

  19. 1/2 c Sugar

  20. 1/4 c Water

  21. 1/4 c Orange Juice

  22. 3 tb Lemon Juice

  23. 2 tb Rum

  24. ** Cake **

  25. Cream butter in a large bowl until fluffy, gradually

  26. adding the sugar. Beat until light. Stir in rinds, add

  27. eggs one at a time beating after each. Combine flour,

  28. baking powder, baking soda and salt. Add alternately

  29. with buttermilk, beginning and ending with dry

  30. ingredients. Beat well after each addition. Fold in

  31. nuts and pour in a greased and floured 9-inch tube

  32. 350oF oven for 50-60 minutes

  33. until test done. Cool in pan on a rack for 10 minutes.

  34. ** Hot Rum Sauce **

  35. Boil sugar and water for 1 minute, cool slightly, add

  36. remaining ingredients. Carefully spoon over warm cake

  37. until all is absorbed. Let cool and dust with powdered

  38. sugar. Cover loosely to store.
