  1. 1 3/4 c. all-purpose flour

  2. 1/2 c. sugar

  3. 2 tsp. baking powder

  4. 1 tsp. baking soda

  5. 1/2 tsp. salt

  6. 1/2 c. wheat germ

  7. 3 med. bananas (about 1 c.), mashed

  8. 1/4 c. skim milk or buttermilk

  9. 1/4 c. oil

  10. 4 egg whites or 2 eggs

  1. Preheat oven to 350 degrees. Sift flour, sugar, baking powder, baking soda and salt. Mix in wheat germ (optional). Add all remaining ingredients and beat until well blended. Add some nuts. Place in an oiled 8×4 inch loaf pan. Bake in moderate oven for about 45 minutes to 1 hour until well done. (Skip wheat germ and use 1 3/4 cups flour. You can use 1 1/2 cups flour if using wheat germ.)
