  8. 1 1/2 c Flour

  9. 1 tb Sugar

  10. pn Salt

  11. 1/2 c Dry red wine OR -dry Marsala

  12. Oil for frying

  13. --FILLING--

  14. 1 1/2 c Powdered sugar

  15. 2 tb Candied fruit

  16. 1/4 c Chocolate chips

  17. 1/2 ts Cinnamon

  18. 1/4 c Chopped pistachios

  19. Sift together sugar, flour and salt. Work the wine in gradually, kneading

  20. to a soft dough. Roll out on a floured surface to 1/8-inch thickness, and cut out five-inch discs. Wrap each disc around a cannoli form, sealing the

  21. edge with egg white.

  22. Heat oil, five inches deep, in a small, deep saucepan, and fry one at a

  23. time until golden and crisp. Remove with tongs, let oil run off, and drain

  24. on a paper towel. Let the pastry cool slightly, then slip it carefully off

  25. the form.

  26. Note: Shells will keep for a week or two in a sealed container, so they

  27. can be made ahead.

  28. Filling: In a mixing bowl, beat the ricotta with an electric mixter. Add

  29. remaining filling ingredients. Stuff shells just before serving. Sprinkle

  30. with powdered sugar.
