  1. Ingredients :

  2. 1 pkg frozen chopped spinach, thawed & drained well

  3. 2 cups mayonnaise

  4. 1/4 cup chopped white onion

  5. 1 small clove garlic, minced

  6. 1 tbs. lemon juice

  7. 1 medium cucumber, sliced into round medallions

  8. ripe olive slices or pimiento for garnish

  1. Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best.) While very cold, form small balls with spinach mix and place each one on a cucumber medallion.

  2. Top with a slice of ripe olive or pimiento and arrange on serving plate.
