  1. 1 Cold roast duck - cut serving pieces

  2. 2 tablespoons 30ml Butter

  3. 1 tablespoon 15ml Onion - chopped (medium)

  4. 2 tablespoons 30ml Flour

  5. 2 cups 125g / 4.4oz Condensed chicken consomme

  6. Juice of 1 orange

  7. Grated rind of 1 orange

  8. 1/4 cup 59ml Dry red wine

  9. Salt - to taste

  10. Freshly-ground black pepper - to taste

  1. Melt butter and soften onion in it. Stir in the flour and brown it. Add consomme and simmer for 10 minutes. Add orange juice and grated rind, wine and duck pieces. Season to taste and simmer gently for 30 minutes.
