  1. 10 manicotti shells cooking oil

  2. 1 (4oz.) can mushroom s, chopped

  3. 1 (15 1/2oz.) jar of spaghetti sauce with mushrooms Mozzarella cheese Meat Stuffing:

  4. 1 onion , chopped

  5. 2-3 Tbsp. cooking oil

  6. 1 lb. ground beef

  7. 1/2 (10oz.) pkg. frozen chopped spinach ; cooked and drained

  8. 4 Tbsp. cottage cheese

  9. 1 egg , beaten

  10. 1 Tbsp. sour cream salt and pepper Tomato-herb Sauce:

  11. 1 (1 qt. 14oz.) can tomato juice

  12. 3 bay leaves

  13. 1 tsp. fennel seed

  14. 1/2 tsp. thyme

  15. 1/2 tsp. rosemary leaves

  16. 3 cloves garlic

  1. Brown the onion in a skillet in cooking oil. Add meat and cook until all red color is gone; Remove grease. Remove from heat and add all other stuffing ingredients. Mix well. Cook the manicotti according to package directions (put a few drops of cooking oil in the water to keep from sticking together). Drain off water. Done when still holding together, and not too soft. Some may tear anyway. Do what you can. Stuff the manicotti shells with the meat mixture. Place stuffed manicotti in a greased baking dish and cover them with the chopped mushrooms and spaghetti sauce. Put a piece of Mozzarella cheese on each manicotti, then pour Tomato-herb sauce over ALL. Bake, uncovered, at 325° for about 30 minutes.
