  1. 3 c. all-purpose flour

  2. 2 c. sugar

  3. 1 tsp. soda

  4. 1 tsp. salt

  5. 1 tsp. ground cinnamon

  6. 1 c. chopped nuts (walnuts, pecans, hazelnut, etc.)

  7. 3 eggs, beaten

  8. 1 1/2 c. vegetable oil

  9. 2 c. mashed, ripe bananas

  10. 1 (8 oz.) can crushed pineapple, drained

  11. 2 tsp. vanilla extract

  1. Combine dry ingredients; stir in nuts and set aside. Combine remaining ingredients; add to dry ingredients stirring just until moistened. Spoon batter into 2 greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 1 hour and 5 minutes or until toothpick inserted into center comes out dry. Cool 10 minutes before removing from pans. Place on wire racks and cool completely. Makes 2 loaves.
