  1. 50 g (1 3/4 oz) thin green beans

  2. 100 g (3 1/2 oz) mixed salad leaves, such as frisee and rocket

  3. 2 tbsp chopped fresh mint

  4. 1/4 bulb of fennel, cut into thin strips

  5. 2 shallots, finely chopped

  6. 6 ripe fresh figs, cut in half

  7. 90 g (3 1/4 oz) Parma ham, fat removed and cut into thin strips

  8. 1 large slice of pineapple, about 140 g (5 oz), cut into small strips

  9. Balsamic and lemon dressing

  10. 2 tbsp extra virgin olive oil

  11. 1 tbsp balsamic vinegar

  12. juice of 1/2 lemon

  13. salt and pepper

  2. Drop the beans into a saucepan of boiling water and cook for just 2 minutes. Drain and refresh under cold running water.
