  9. 1/2 c Lotus seeds, dry

  11. 1 c Almonds -- sliced, roasted

  12. wash rice and lotus seeds and place in a pressure cooker. Add water and 3 to 5 hours, until softened.

  13. Add salt and secure lid. On medium-high heat, bring pressure up to 15

  14. pounds. Lower heat and place a flame deflector or heat diffuser beneath the

  15. pressure cooker. Cook for 50 minutes.

  16. Remove from heat and allow pressure to reduce.

  17. Mix in almonds and serve hot.
