  2. 1 1/2 kilograms beef skirt steak

  3. 1/4 cup oil

  4. 1 teaspoon black mustard seeds

  5. 1/2 teaspoon fenugreek seeds

  6. 6 cloves garlic -- crushed

  7. 1 tablespoon ginger -- finely chopped

  8. 3 medium onions -- finely sliced

  9. 1 1/2 teaspoons turmeric

  10. 2 tablespoons coriander

  11. 1 tablespoon cumin powder

  12. 2 teaspoons chili powder

  13. 3 teaspoons salt

  14. 2 teaspoons garam masala

  15. 2 tablespoons vinegar

  16. 750 gram cubed potatoes

  17. 2 tablespoons fresh coriander

  1. Cut steak into cubes. Heat oil and fry mustard seeds till they burst. Add fenugreek, garlic, ginger and onion. Fry until onions are golden. Add turmeric and fry 1 minute.

  2. Add coriander, cumin and chile. Stir well. Add salt and vinegar, and fry until liquid evaporates. Sprinkle in the garam masala and mix well. Add meat and turn till coated.

  3. Add extra vinegar if spices start to stick.

  4. Reduce heat, cover and simmer for 1.5-2 hours. Add cubed potatoes and cover. Cook for further 20-30 minutes or until potatoes are cooked.

  5. Garnish with fresh coriander.
