  1. Seitan Pastrami (makes about 8 - 10 servings)

  2. 1 1/2 cups instant gluten flour (vital wheat gluten)

  3. 1/4 cup Red Star Vegetarian support formula, nutritional yeast flakes

  4. 2 tsp. paprika

  5. 1/4 tsp. ground cinnamon

  6. 1/4 tsp. ground cumin

  7. 1/4 tsp. (or more!) ground black pepper

  8. 1/8 tsp. cayenne pepper

  9. 1/8 tsp ground allspice

  10. 3/4 cup cold water

  11. 4 tbsp. tomato paste

  12. 2 tbsp. soy sauce

  13. 2 tbsp. olive oil

  14. 3 cloves garlic, pressed

  15. 1 tsp. salt

  16. Preheat the oven to 325 F.

  17. Place the gluten flour, yeast flakes, and the seasonings in a large

  18. mixing bowl, and stir them together. Place the liquid ingredients

  19. in a small bowl and mix them together. Pour this liquid into the

  20. dry ingredients, and mix them thoroughly. If there is still flour

  21. 1 or tbsp only!). You should now have a large, firm, spongy mass in

  22. the bowl. This is called gluten.

  23. Knead the gluten directly in the mixing bowl for about a minute,

  24. just to blend (do not add any more flour).

  25. 6 to 8 inches long.

  26. Wrap the log tightly in silver foil, twist the ends up so you have

  27. a tight package something like a christmas cracker. Place on a

  28. dry baking sheet. If you don't want the foil to be in contact with

  29. your food, wrap the gluten tightly in a piece of parchment paper

  30. before you wrap it in the foil.

  31. Bake the "pastrami" for 1 1/2 hours. When done, unwrap the seitan,

  32. transfer it to a cooling rack, and let it cool thoroughly. When

  33. completely cool, wrap the seitan tightly in plastic wrap and chill

  34. in the fridge for a few hours before eating. Slice into paper-thin

  35. rounds.
