  1. 1 lb 454g / 16oz Small button mushrooms*

  2. 1/3 cup 78ml Olive oil

  3. 3 tablespoons 45ml Balsamic vinegar

  4. 2 Garlic cloves - minced

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 2 tablespoons 30ml Brandy

  7. 1/2 teaspoon 2 1/2ml Freshly-ground ground pepper

  8. 2 tablespoons 30ml Chopped fresh parsley

  9. 1/2 teaspoon 2 1/2ml Minced fresh thyme

  10. 1/8 tspn dried thyme

  11. 1/2 teaspoon 2 1/2ml Minced fresh oregano

  12. 1/8 tspn dried oregano

  1. * Alternate Mushrooms: Common Store Mushrooms, Meadow Mushroom Place all the ingredients in a saucepan and simmer very slowly for 10 minutes. Mix gently a few times. Allow the mushrooms to cool in the liquid. Drain and serve with toothpicks.
