  2. SWEET RICE CAKES STUFFED WITH YELLOW BEANS

  7. 1/2 c Yellow mung beans

  8. 2 c Dessicated coconut

  9. 1/2 ts Salt

  10. 3 tb White sesame seeds

  11. 1/4 c Sugar

  12. 2 c Rice flour

  13. 1 c cold water for minutes. Drain & set aside. Mix the coconut with the

  14. salt, sprinkle evenly n a plate & set aside. In a

  15. small pot, over low heat, toast the sesame seeds until

  16. light brown. Mix the seeds into the sugar evenly

  17. spread on the dish & set aside.

  18. In a large bowl, mix the rice flour with 1/2 c water &

  19. knead into a dough the consistency of pie crust. Mold

  20. into 1 1/2 balls, then flatten with the palm of your

  21. 1/8 thick &

  22. 2 wide. Fill a

  23. large bowl half full with water & bring to a boil.

  24. 4 to 5 minutes or until they

  25. start to float. While still hot, coat each side of the

  26. 1/4 to

  27. ts of the mung beans into the centre of each cake.

  28. Fold the edges over & pinch closed to form a half

  29. circle. Dip each into the sesame seed-sugar mixture,

  30. coating both sides well. Serve hot or cold. They will
