  2. Title: Stuffed Eggplant Padovana

  5. 1 md Eggplant

  6. 1 md Onion, minced

  7. 1 tb Parsley, minced

  8. 2 tb Celery, chopped

  9. 1 sm Green pepper, chopped

  10. 1 c Plum tomatoes

  11. 1 c Bread crumbs

  12. 1/4 c Parmesan Cheese, grated

  13. Salt and pepper, to taste

  14. 3 tb Olive Oil

  15. Clean eggplant; cut in half lengthwise. Scoop out pulp, leaving

  16. shell 1/2 inch thick. Cut pulp into small pieces.

  17. Combine onion, parsley, celery, green pepper, plum tomatoes, bread

  18. crumbs, cheese, salt and pepper with pulp. Fill eggplant halves with

  19. mixture.

  20. Place prepared eggplant in baking dish with olive oil. Bake at 350F.

  21. for 45 minutes. Lower heat if necessary to prevent browning.
