  3. 1/2 cup sugar

  4. 1 dash salt

  5. 1 cup boiling water

  6. 1 tablespoon butter

  7. grated rind of 1/4 lemon

  8. 2 tablespoons lemon juice

  1. Combine cornstarch, sugar, and salt, and mix well... Add boiling water, stirring constantly, and boil gently 5 minutes... Add butter and lemon rind and juice... Makes 1 1/4 cups sauce. Tart and transparent. ORANGE SAUCE: use 1/2 teaspoon grated orange rind and 2 T. orange juice instead of lemon rind and juice... Try this sauce with Steamed Fig Pudding or with Dutch Apple Cake.
