  1. 8 Cornish game hens

  2. -(each about 1 lb)

  3. 12 lg Garlic cloves, peeled

  4. -and finely minced 4 T Oregano, dried

  5. Salt (to taste)

  6. Pepper (to taste)

  7. 1 C Red wine vinegar

  8. 1/2C Olive oil

  9. 1 C Prunes, pitted

  10. 1 C Apricots, dried

  11. 1 C Green olives, pitted

  12. 1/2C Capers

  13. -of the juice)

  14. 8 Bay leaves

  15. 1 C Brown sugar

  16. 1 C White wine, dry

  17. 4 T Italian parsley (chopped)

  1. + Clean hens well under cold water.

  2. Pat dry.

  3. In a large bowl, combine hens, garlic, oregano, salt, pepper, vinegar, oil, prunes, apricots, olives, capers (with juice) and bay leaves.

  4. Cover and refrigerate overnight to marinate.

  5. Preheat oven to 350 degrees F.

  6. Arrange game hens in 1 or 2 shallow roasting pans.

  7. Spoon all the marinade over the hens.

  8. Sprinkle evenly with brown sugar and pour wine around them.

  9. Bake for 1 to 1 1/4 hours, basting frequently, until golden.

  10. Juice should look clear when thigh is pricked with a fork.

  11. Transfer hens, fruit, olives and capers to a serving platter.

  12. Moisten with pan juices and sprinkle with parsley.

  13. Pass remaining pan juices in a sauce boat.

  14. NOTES: * Cornish game hens stewed in fruit and sugar -- I originally got this recipe from the Sunday magazine of the local paper.

  15. I served it last year for Christmas dinner, and it's very good.
