  1. 3 cups organic apple juice

  2. 6 cups organic wholegrain oats

  3. 3 cups natural yoghurt (I use Greek EasiYo or organic Cyclops natural)

  4. 6 Granny Smith apples, grated (leave the skin on for extra goodness) To serve Manuka honey Toasted hazelnuts Seasonal fresh fruit

  1. Bircher muesli Pour the apple juice over the oats, cover the bowl and set aside overnight (put it in the fridge in hot weather).

  2. In the morning, add the yoghurt and grated apple and stir well. Serve topped with a drizzle of manuka honey, toasted nuts and fresh seasonal fruit. I’ve used kiwifruit, but sliced nectarines, raspberries and blueberries are delicious in summer.

  4. The fibre from the oats, apple, kiwifruit and nuts all help keep the bowel healthy and give a sense of satiety – when carbohydrates are not processed, they taker longer to digest and slowly release their energy. The yoghurt provides an excellent source of calcium as well as contributing to the population of good bacteria in the intestine. Kiwifruit is an excellent source of vitamin C and helps increase the absorption of iron from the oats.

  5. Additionally, I use Airborne Health Manuka honey, which is high in antioxidants and antibacterial activity.
