  1. 1 cup granulated sugar

  2. 2 large eggs plus

  3. 2 egg yolks

  4. 2/3 cup lemon juice

  5. 1 tablespoon finely grated lemon zest

  6. 1/2 cup butter, softened

  7. 3 cups cooked medium grain rice

  8. 2/3 cup whipping cream, whipped - divided use

  9. 1 cup blueberries

  1. Combine sugar, eggs, egg yolks, lemon juice and lemon zest in 2-quart saucepan. Cook over medium-low heat until thick and creamy (8 to 10 minutes), stirring constantly.

  2. Remove from heat; stir in butter and rice. Cool.

  3. Fold in 1 cup whipped cream.

  4. Alternate layers of blueberries and rice pudding in parfait glasses.

  5. Garnish with whipped cream and blueberries.
