  1. Orange Walnut Cake Athens Style

  2. Yield: 10 servings

  3. 1/2 lb butter

  4. 2 cups granulated sugar

  5. 4 eggs

  6. 1 orange, juice and grated rind

  7. 3 cups all-purpose flour

  8. 1 tsp baking powder

  9. 1/4 tsp salt

  10. 1 cup walnuts, coarsely chopped

  11. confectioners' sugar, optional

  12. Cream the butter until light and fluffy, then gradually add the

  13. sugar. Continuing to beat, add the eggs one at a time, beating

  14. well, on medium speed, after each addition. Gradually add the orange

  15. juice and rind. Meanwhile, sift the flour with the baking powder

  16. and salt and gradually add to the batter. Add the walnuts last,

  17. blend another minute on medium high speed, and pour into a greased

  18. 8-inch tube pan. Bake in a moderate oven (350F) for 25 to 30 minutes until the color is a light chestnut and the cake springs back to the touch. (Watch

  19. carefully because this cake bakes quickly.) Turn onto a wire rack,

  20. round side up. Dust with confectioners' sugar and cool thoroughly

  21. before slicing.
