  1. 2 pounds Salmon fillet -- skinned

  2. 1 1/2 tbsp. Cognac

  3. 1/8 cup Lemon peel -- minced

  4. 1 tbsp. Shallot -- minced

  5. 3/4 tbsp. Kosher salt

  6. 3/4 tbsp. Sugar -- brown

  7. 1/2 tbsp. Thyme -- fresh -- minced

  8. 3/8 teaspoon

  1. Preparation : Place salmon fillets on heavy large baking sheet. Rub cognac over both sides of fish. Mix together all remaining ingredients in a small bowl. Rub on fish and cover, leave for at least 2 hours. Cook for 10-15 minutes until cooked through. Serve garnished with sprig of thyme, or rosemary and a slice of lemon. Serving Ideas: Great with a salad or curried rice. NOTES: I use fresh herbs from my garden, you can use Rosemary instead of thyme, if you prefer. To heat, Pre-heat oven to 375 degrees, pop salmon into the oven for approx.
