  1. 1. 3 cups wheat flour. (I like king Arthur flour)

  2. 2. 1 cup white flour (unbleached not self rising)

  3. 3. 2 Ounces soft butter

  4. 4. 14 ounces Buttermilk

  5. 5. 1 tsp salt

  6. 6. 1 1/2 Tsp baking soda

  1. Preheat the oven to 425 Degrees F. Grease the bread dish with butter wrapper.

  2. Sieve all the dry ingredients together in a big bowl. Rub the butter into the flour mixture till its crumbly.

  3. Slowly add the buttermilk to make a sticky dough.(I usually have someone else pour the buttermilk or it gets real messy) if your dough is too wet add a little more wheat flour.

  4. Put the the dough on a floured surface and knead lightly from outside to center. Shape into a round flat shape 2 inches high and cut a x in the center with a knife.

  5. Put the dough in your bread pan and bake for 20mins covered. Remove the top and bake for an additional 10mins.

  6. Check the bread by taking it out of the pan and tapping the bottom, if it sounds hollow its done. Put the bread on a cooling rack and cover with a damp kitchen cloth for about 30mins.

  7. You can keep the bread in the fridge it will stay moist, put a little of that left over Kerrygold butter on toasted pieces with some tea its great.
