  1. 2 Fresh corn ears

  2. Drizzle of olive oil

  3. Salt - to taste

  4. Freshly-ground black pepper - to taste

  5. 4 Ripe Italian plum tomatoes - peeled, seeded,

  6. 1/4 cup 15g / 1/2oz Minced red onions

  7. 1 teaspoon 5ml Minced Habanero peppers

  8. 2 tablespoons 30ml Chopped fresh cilantro

  9. 1 tablespoon 15ml Freshly-squeezed lime juice

  10. 1 tablespoon 15ml Freshly-squeezed lemon juice

  1. Season the corn with olive oil, salt and pepper. Place the corn over a stove's open flame and cook for about 1 to 2 minutes on all sides. Remove and cool. Remove the kernels from the cob. Combine the corn, tomatoes, onions, peppers, cilantro, lime juice and lemon juice. Mix well. Season the salsa with salt and pepper.
