  2. 5 large potatoes

  3. 3/4 cup chopped onion

  4. 1/3 cup melted butter

  5. 1 small can evaporated milk

  6. 2 eggs

  7. 1 teaspoon salt

  8. 1/4 teaspoon pepper

  9. 1 cup shredded cheddar cheese

  1. Pare potatoes and place in cold water to cover. Saute onion in butter till tender. Add milk and bring to a boil and remove from heat. Combineeggs, salt and pepper in bowl and beat till frothy. Shred potatoes on a medium blade. Immediately place in egg mixture to prevent discoloration. Add 1/2 cup of cheese and milk mixture. Bake in a 9x9 inch dish at 350 degrees for 1 hour. Top with remaining cheese and bake for 30 additional minutes.
