  2. 2 eggs -- beaten

  3. 1 cup packed brown sugar

  4. 1/3 cup butter -- melted

  5. 1/2 cup all-purpose flour

  6. 1/4 teaspoon salt

  7. 1/2 teaspoon baking powder

  8. 1 teaspoon vanilla

  9. 3/4 cup pecans -- finely chopped

  1. Combine all ingredients and stir until well mixed. Grease two mini-muffin pans (or line with paper baking cups) and fill three-quarters full. Bake at 350 degress for 12 to 15 minutes. Remove from pan and allow to cool.

  2. Note: These muffins taste like a bite of pecan pie.
