  2. 2 pounds - yam

  3. 3 tablespoons - Chipotle Butter

  4. 12 ounces - pumpkin ale or other malty -- lightly hoped ale

  5. 1/8 cup - grated parmesan cheese

  1. Scrub and peel yam and cut into bite-size pieces. Melt Chipotle Butter in a sauce pan. Put yam into a shallow pan or skillet and pour in ale and half the melted Chipotle butter. Stir to coat the yams with the ale/chipotle butter mixture, cover pan and place in oven at 375 degrees fahrenheit to braise until yam is just about cooked through (should take about 45 to 50 minutes). Brush the remaining melted Chipotle Butter over the cooked yam, return pan to the oven, uncovered, turn up heat and broil until yam begins to brown on top. Remove pan from oven and sprinkle on the grated parmesan cheese.
