  1. 1/2 c Unbleached white flour 

  2. 2 Egg whites, slightly beaten

  3. 1 c Whole wheat flour 

  4. 1/2 c (to 1 cup) fresh or frozen

  5. 1 ts Baking powder -blueberries

  6. 1 c Non-fat milk 

  7. 1 tb Orange bits

  1. Sift dry ingredients together. Combine milk and egg whites. Stir into dry ingredients just until moistened. Carefully stir in blueberries. Drop batter onto heated non-stick pan (griddle). Cook until bubbles appear, turn and cook other side. Serve warm with sauce (see separate recipe titled Pancake-Waffle Sauce for Diabetics). Makes 10 to 12 pancakes.
