  1. 1 baked pie shell

  2. 8oz package cream cheese

  3. 1 cup peanut butter

  4. 1 1/4 cups icing sugar

  5. 1 cup whipping cream

  6. 2 tsp vanilla

  7. 6oz semisweet chocolate, chopped.

  8. Directions

  9. In a large bowl, stir cream cheese until smooth, then mix in peanut butter and 1 cup icing sugar.

  10. Beat together until smooth and well combined.

  11. In another bowl, whisk 1/2 cup whipping cream until you have soft peaks.

  12. Add 1/4 cup remaining icing sugar and vanilla, then beat again until soft peaks return.

  13. Add about a third of the whipped cream to the peanut butter mixture, and stir through.

  14. Fold in the remaining whipped cream.

  15. Pour into the cooled pie shell, and smooth out the top.

  16. Either in the microwave or in a double boiler, combine 1/2 cup remaining cream and chocolate, and heat until melted.

  17. Stir until smooth.

  18. Cool to a lukewarm temperature, then pour over the top of the pie.

  19. Spread to the edges. Refrigerate until the chocolate is solid.

  20. Pie can be served cold or warmed up. .
