  1. 1 large eggplant -- peeled and cubed

  2. 1 onion -- chopped

  3. 1 can cream of mushroom soup

  4. 1 cup cheddar cheese -- shredded

  1. Preparation : In skillet, melt butter with vegetable oil. Add eggplant and onion and cook until tender. Add soup and cheese and turn into a 2 quart casserole. Bake at 350F. for 30 minutes.
