  1. 6 nice size potatoes (small diced)

  2. 1 can of potato soup

  3. 1 container 8oz sour cream

  4. 8oz bag of cheddar cheese

  5. salt to taste

  6. pepper to taste

  1. preheat oven to 350 degrees peel & cut potatoes (small dice)

  2. set aside in a bowl, mix potato soup, sour cream, 3/4 of cheddar cheese and salt and pepper.

  3. mix in potatoes.

  4. place mixture in casserole dish bake for 20 mins.

  5. sprinkle remainder of cheese on top and bake for additional 10 mins.
