  1. 5 oz 142g Margarine

  2. 10 oz 284g Self-raising flour

  3. 1/4 teaspoon 1 1/3ml Bicarbonate of soda

  4. 5 oz 142g Soft brown sugar

  5. 8 oz 227g Dates - chopped

  6. 2 oz 56g No-soak dried apricots - chopped

  7. 1 oz 28g Walnuts - chopped

  8. 1 oz 28g Egg - beaten (medium)

  9. 6 Milk

  1. Set oven to 180C, 350F.

  2. Rub margarine into flour and soda. Stir in sugar, dates, apricots and walnuts.

  3. Add egg and milk and beat well to combine.

  4. Spoon into patty tins lined with paper cake cases and bake for 20 minutes.
